Today, it sprawls over two spaces in the Market, with a seating area located opposite the kitchen, which offers a tantalising glimpse of the Naples built wood burning oven designed to bake each pizza in Franco Manca’s now famous style.
Bases made of slow risen sourdough and toppings of traditional cured meats and fresh vegetables, the pizza recipes are born of traditional Neapolitan style dating back to the Greek settlers of the early years BC.
